Domìni Veneti produces two types of Valpolicella Ripasso DOC and three types of Valpolicella DOC wines:

But what is it and why is it called “Ripasso”?

 

Ripasso is made with traditional techniques that have been rediscovered and enhanced in recent decades. They consist in leaving the Amarone skins in the fermentation vat and adding an equal quantity of fresh Valpolicella wine, thus starting a new fermentation phase lasting about 7 – 10 days.

 

The incredibly successful wine called Ripasso arises from this process. It has a higher alcohol content than Valpolicella, a more intense colour and a complex aroma. You have no choice but to love this wine.

This Valpolicella Ripasso is made from grapes grown in the high hills, in Torbe.

 

Its style emphasises the most typical and traditional profile of Valpolicella: the interweaving of a well-distributed structure and the harmony of aromatic, olfactory and gustatory sensations create an unmistakable sober and elegant style.

 

It is a dry red wine with a complex aroma and a harmonious, full and velvety flavour. For this exact reason, it pairs very well with all types of red meat, both grilled and braised.

VALPOLICELLA RIPASSO DOC CLASSICO SUPERIORE LA CASETTA

Thanks to the continuous research and experimentation of the Domìni Veneti winemakers, Ripasso “La Casetta” is produced by re-fermenting fresh Valpolicella wine with Recioto skins, giving rise to an absolutely original wine of unparalleled softness and complexity.

 

It has a deep ruby-red colour with purple hues, an intense aroma and full-bodied flavour with hints of dried fruit. Magnificent with red meat, game and aged cheeses.

VALPOLICELLA DOC CLASSICO SUPERIORE VERJAGO

The name Veriacus indicated the valley of Negrar in the Middle Ages. Verjago is an extraordinary Valpolicella in which the elegance and conviviality which are typical of this wine find their true and most complete expression.

 

It is the result of the Quality Project, a multi-year research project led by Domìni Veneti which focused on the micro-areas of the Negrar valley. Only the best grapes are selected from the hilly vineyards, and after the manual harvest in crates they are left to dry for 40 days in special drying rooms. Then a careful winemaking process is carried out and the wine is left to age in barrels, then in bottles. The result is a Super Valpolicella, noble and captivating.

Valpolicella DOC Classico has a style focused on the most typical and traditional profile of Valpolicella: its well-distributed structure, good balance and blend of aromatic, olfactory and gustative sensations create a sober, elegant result.

 

Valpolicella DOC Classico is a young and immediate red wine, perfect on the table with pasta dishes, meats and aged cheeses. It is distinguished for its dry, warm, medium-bodied, velvety flavour with balanced tannins. Its nose is a combination of red fruits, vines and spices.
